I've always been a huge fan of ice cream.

I like it in all forms. Hidden in a cake, plopped on a cone or stuck inside a sandwich.

However, my favorite way to enjoy it, is in a bowl.

Savoring one slow spoonful at time. Mmmmm.

Unfortunately, over the past year, it started to bug my stomach. I have no idea why, really.

It wasn't the milk, I drank that all the time.

And I usually bought vanilla, so it wasn't the fruit or nuts.

Eventually, after trying too many brands to count, I realized that all of them, including Breyers, used some kind of gum and included "natural flavors" which is a catchall term that can't be quantified. Bummer.

Then one magical day, my friend Carla posted her recipe for Strawberry Waffle Cone Ice Creamand I thought that maybe that was the answer. Homemade ice cream.

I could control what I put in it and it would certainly be healthier.

So I reached out and and asked her what kind of ice cream maker she used for the recipe.

Turns out she had a KitchenAid ice cream attachment(<--this one)which was fabulous to hear, since I had a KitchenAid mixer!

We'd given it to my daughter as a late Christmas gift.

I'd found the mixer for a crazy good price(<--this one), but it was never in stock, so I waited until it became available in January.

And it was such a good investment.

It's a 4.5 quart, which is smaller than what I've seen around, but more than sufficient for our simple dessert recipe needs.

I don't think that a day has gone by that it hasn't been used.

So investing in the ice cream attachmentwas a no brainer.

Once it arrived, I just had to find a decent vanilla ice cream recipe, without eggs.

Now, there are a ton of them out there, but like I said, we're simple folks when it comes to food.

So we experimented with our own, one that uses 2% milk rather than whole and less vanilla than most call for and it's become our go to.

And guess what?

No more ice cream stomachaches.

How To Make No Egg Vanilla Ice Cream With A KitchenAid Mixer


Ingredients:

1/4 teaspoon of salt
1 cup of sugar
1/2 tablespoon pure vanilla extract
2 cups heavy cream
2 cups 2% milk

Now, the one thing I must warn, is that while the ice cream itself may be super simple to make, there's a lot of waiting around in the process.

For example, step one requires that the day before you gather your ingredients, you need to put your ice cream attachment bowl into the freezer.

For about 15 hours. Yup. Fifteen.

This is definitely not a Gee, I think I'll have some ice cream now kind of recipe. You need a plan.

We usually put the bowl in the freezer the night before.

Then, the next morning, we get started with the good stuff.

In a glass mixing bowl, we stir or whisk all of the ingredients together well, until the salt and sugar have dissolved.

Next, we cover the bowl and place it in the refrigerator for a few more hours, until it's completely chilled.

More waiting.

Once we're ready to churn, we take the mixture out of the fridge and pour it into the frozen KitchenAid bowl, which has been removed from the freezer and attached to the mixer with all its pieces.

We start the mixer, pour the ice cream batter inside and let the machine do its magic for about 20-30 minutes.

When the ice cream looks done, we scoop it out of the attachment bowl, place it in another bowl and cover it, for one last trip to the freezer.

For another 2-3 hours. While we wait some more.

I told you, lots of waiting.

But when it's done, it's SO worth it.

The ice cream is fresh, cool and very, very delicious.

You can eat it alone or top it with anything you like.

You can even add a hard shell of chocolate to it, with this quick recipe.

Or you can eat it like I do.

One slow spoonful at a time.

Every time you walk by the freezer.

Until it disappears.

  5. Put ice cream into another bowl, cover and freeze again for 2-3 hours
  6. Serve

Notes:

You can top your ice cream with a variety of fruit, nuts or chocolate.

You can also pop it on top of pie.
