Table of Contents
Why you'll love this recipe
- The TEXTURE! These will be the fudgiest and richest tasting brownies you've ever had, hands down.
- THREE layers of chocolate goodness.
Ingredients needed
- Butter: Unsalted butter is used to control amount of sodium.
- Sugar: Granulated sugar is used in this recipe.
- Cocoa Powder: I use a mixture of regular and dark cocoa powder in this recipe. You can use one if you like!
- Salt: To balance the sweetness and bring out the flavor.
- Vanilla extract: For flavor.
- Eggs: For emulsifying and adding richness to the brownie batter.
- Flour: I use all-purpose flour in this recipe.
- Cream cheese: Full fat & room temperature works best.
- Oreo cookies: I use an entire package of Oreo cookies in this recipe. 30 cookies total.
- Chocolate: I use semi-sweet chocolate chips for the chocolate coating.
- Shortening: Helps to soften the chocolate coating slightly so it doesn't crack when cutting. You can also use coconut oil or vegetable oil.
Substitutions & Variations
- Experiment with different flavor Oreos for the truffle layer!
How to make these Oreo Brownies
- Prepare brownie batter: Add butter, cocoa powders and sugar to a large microwave-safe bowl. Microwave for 1 minute & 30 seconds or until butter is melted. Mix everything together until smooth. Stir in eggs and vanilla until combined. Add the flour and salt and mix until combined. The batter will be very thick and glossy.
- Bake: Pour batter into prepared baking pan and bake for 22-25 minutes.
- Prepare truffle layer: In a large food processor, add Oreo cookies and pulse into a fine crumb. Dump in cream cheese and pulse until a "dough" like consistency forms and you can no longer see white from the cream cheese.
- Add truffle layer: Once brownies are warm to the touch, pack on the truffle mixture into an even layer.
- Prepare chocolate coating: Melt the chocolate chips and shortening at 30 second increments in the microwave until smooth and pourable. Pour the chocolate on top of the truffle layer and spread it out with a rubber spatula into a smooth layer
- Set: Place tray into the refrigerator for 10-20 minutes to allow the top to set up properly.
- Cut & serve: Allow to come back to room temperature a bit before cutting into bars.
Storage
Store these truffle brownies for up to 5 days in an airtight container.

Recipe Tips
- These bars are extremely rich so Iusuallylike to cut them into smaller 2" squares. Who am I kidding though? I think secretly in my mind I cut them smaller just so I can say I only had a small one ... and then go back for another because they're small.Isn't that how it works?
- Be sure the bottom layer of brownies is still warm to the touch so the truffle layer will adhere properly when cooled.

Course Dessert
Cuisine American
Servings 9 -12 brownies
Ingredients
Brownie Layer
- 10 tbs unsalted butter
- 1 ¼ cups sugar
- ½ cup regular cocoa powder
- ¼ cup dark cocoa powder
- 2 eggs
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- ¼ teaspoon salt
Truffle Layer
- 4 oz cream cheese cubed, cold
- 30 Oreo cookies
Chocolate Layer
- 1 ½ cup semi-sweet chocolate chips
- 1 tbs shortening or vegetable oil or coconut oil
Instructions
Preheat oven to 325°F. Line a 9x9 baking pan with parchment paper, set aside.
For the brownies
Place butter, both cocoa powders and sugar in a large microwave-safe bowl and microwave for about 1 minute and 30 seconds, or until butter is melted. Whisk everything together until smooth. Stir in eggs and vanilla until combined. Pour in the flour and salt and mix until everything is completely combined. The batter will be very thick and glossy.
Pour the batter into your prepared baking pan and smooth it out until level. Bake for 22-25 minutes or until a toothpick comes out just slightly wet with a little bit of batter left on it - the top will not look so "wet" anymore when they are done. Underbaking the brownies just a bit is what makes them fudgy. Bake longer for less fudgy brownies.
For the truffle layer
In a large food processor, add Oreo cookies and pulse into a fine crumb. Dump in cream cheese and pulse until a "dough" like consistency forms and you can't see the cream cheese anymore.
Take pieces of the truffle mixture and pack it onto the warm brownies into an even layer while the brownies are still warm to the touch. The brownies need to be warm for the truffle layer to stick properly.
For the chocolate layer
In a small bowl, melt the chocolate chips and shortening at 30 second increments in the microwave until completely smooth and pourable. Pour the chocolate on top of the truffle layer and spread it out with a rubber spatula into a smooth and even layer.
Place tray back into the refrigerator for 15-20 minutes to allow the top to set up properly. Take the pan out and allow the brownies to warm up for a few minutes for smoother cutting lines.

Any way to make these in a half sheet pan? I need them for a crowd! Thanks.

I wouldn't recommend baking in a half sheet pan because I'm not sure the sides are tall enough for this recipe. I would recommend doubling this recipe and making it in a 9x13" pan, two times and adjust the bake time for longer. The bars will just be slightly thicker but still amazing! 🙂

These are soooo good! The only thing I did differently is I used regular unsweetened cocoa powder for both measurements... I didn't have any dark. Oh, and my shortening smelled a little bit rancid, so I tossed that and just used coconut oil.
These will not last long in this family of 6... I'll be making them again soon!
I have made oreo truffle balls before, but they are so time consuming that i haven't made them in years. I've missed them. This was a much easier way to get that goodness in me! 😁Reply

These are extremely yummy! I made this weekend for the holiday. You are right, need to cut them small because they are rich. One suggestion. I didn’t read the tips until later and it mentions making sure bottom layer is cool to touch so Oreo layer attaches. But instructions say to fool completely. Mine didn’t attach because I let cool. May want to add that tip to recipe. Thanks for this yummy dessert!Reply

I know this sounds crazy, and I probably know the answer, but the package of Oreo cookies, are you supposed to take the cream out? I would assume you would, however other recipes on the net have said do not remove the cream. What do I do here?

No, you do not remove the cream in this recipe!! Enjoy! 🙂
