I come from south India and south Indian breakfast recipes are one of the important aspects of our day to day lives. specifically, idli and dosa recipes are most frequently prepared almost every week. however, I personally have 2 different recipes with a different set of ingredients for individual dosa and idli recipes. depending upon the crisp level the ratio of the ingredients changes and varies. well, that’s my personal preference but I also do acknowledge the fact that some people prefer to have just one solution for idli, dosa or south Indian batter-based recipes. this can be achieved by combining 2 recipes or meeting an ingredients ratio point that is suitable for both. that’s what I have done in this and I guess that’s what is followed in most of the store-bought batter recipes. I personally prefer this recipe when I like to have soft idli and dosa, but note that you may not be able to use this for crisp dosa.

Ingredients

  • 2 cup idli rice
  • 1 cup urad dal
  • 1 cup poha, thick
  • ¼ tsp methi
  • water, for soaking and grinding
  • salt
  • oil, for roasting

Instructions

  • firstly, in a large bowl take 2 cup idli rice, 1 cup urad dal, 1 cup poha, thick and ¼ tsp methi.

  • rinse well using water.

  • add enough water, and soak it for 4 hours.

  • drain off the water and transfer to the grinder. you can also grind in mixer grinder.

  • add water as required and grind for 30 minutes.

  • grind to really smooth and fluffy batter.

  • transfer the batter to a large bowl.

  • cover and allow to ferment the batter for atleast 8 hours.

  • the batter has rinsed up, indicating the batter is well fermented. mix it gently.

  • take the required amount of batter into a small bowl. and you can refrigerate the rest of the batter for up to a week.

  • add salt as required and mix well.

  • you can prepare a slightly thick dosa.

  • or prepare super soft idli by steaming the idli for 10 minutes.

  • finally, idli dosa batter is ready and can be used for up to a week.
