Ingredients you need for the Baked Sheet Pan Pork Chops and Potatoes
4 pork chops, bone-in1 lb (450g) mixed baby potatoes1 bell pepper, cut in strips1 red onion, sliced1 tablespoon olive oil1 teaspoon garlic powder1/2 teaspoon salt and pepperParmesan, for garnishFresh chopped parsley, for garnishThe spice marinade1/4 cup (60ml) Olive Oil4garlic cloves, peeled, de-germed1/4 cup (60ml) fresh rosemary leaves1 teaspoonground corianderJuice of 1 lemon1 bouillon cube1 teaspoon honeySalt and fresh cracked pepper, to tasteRed chili pepper flakes, to taste
Directions
1.To make the baked pork chops with potatoes: Pre-cook potatoes by boiling them for 3-4 minutes, drain and cut in halves — this step is optional but ensures crisp-melting potatoes quicker in the oven. In the meantime, preheat your oven to 400°F (200°C) and lightly oil a baking sheet or coat with nonstick spray.
2.Place halved potatoes in a single layer onto one side of the prepared baking sheet. Add olive oil, garlic, and Italian seasoning; season with salt and pepper, to taste. Gently toss to combine. Transfer into the oven and bake for15 minutes, until golden brown and crisp.
3.In the meantime, prepare the spice marinade for the pork chops by combining olive oil, garlic, rosemary, salt, black pepper, chili pepper flakes, coriander, lemon juice, honey and bouillon cube in a blender and pulse quickly. Transfer the mixture to a Ziploc bag and add the pork chops. Allow to sit on the counter for 15 minutes while potatoes are roasting.
4.When potatoes are ready, remove from oven. Drain pork chops from the marinade and arrangeonto the opposite side of the prepared baking sheet along with red onion and bell pepper strips. Sprinkle potatoes with parmesan.
5.Place the sheet pan back into the middle rack and broil until the pork chops are browned and charred at the edges, about 6-7minutes per side, or until completely cooked through. For thinner pork chops, simply roastfor 10-12 minutes on one side only.
6.When done, sprinkle potatoes with additional parmesan and fresh chopped parsley and serve the baked sheet pan pork chops and potatoes directly from the sheet pan. Enjoy!

How to buy pork chops
Look for bone-in pork chops. They take a little longer to cook than boneless pork chops, but they are a good way to ensure you get tender and juicy pork chops every time. They take only a few more minutes to cook, so it won’t really make a difference comparing to boneless pork chops.
How to prep pork chops
Season the pork chops well before cooking: Pork chops are a pretty lean and bland cut of meat on their own. Make sure to season your pork chops with salt and spices before cooking to bring out the natural flavors of the meat. You can also try a very short brine (about 30 minutes) to improve the taste and texture of your pork chops.
How to cook pork chops
Pork chops are a tender, quick-cooking cut of meat so it is easy to overcook them if you’re not careful – they will end up dry and tough. That’s why we like to begin first with the pork chops on the stovetop, where they get a good sear (and a nice golden crust), and then transfer them to the oven to finish cooking. The heat of the oven helps control the speed of cooking and prevents the outside of the pork chops from getting dry before the middle has finished cooking.
The USDA recommends cooking pork chops to a minimum of 145ºF (63ºC). Visit the USDA website for more info on how to cook or chops.
So, to properly cook the pork chops, you can use a meat thermometerto check the internal temperature, don’t rely blindly on cooking time.
Once done, let the pork chopsrest on a plate for 10 minutes, covered with another plate or tented with foil. The pork chops will continue to cook and the residual heat will bring them to the recommended 145ºF.
